| Reheating Instructions
We offer below reheating instructions for our most frequently used technologies in kitchens to get the best results for our products | | Bain-marie | | | Traditional or Convection Oven
| This is the easiest and least expensive method, requiring only a pan filled with water. Our whole product line is adapted to this technique. You can drop the products in simmering water, frozen or refrigerator thawed. NEVER BOIL THE WATER.
| | This is the best method to optimize the flavor of the following products: Duckling thigh, Duckling fillet, Duck half magret and Rack of Lamb. Remove from pouch and pan them in a 180°C (or 356°F) preheated oven for about 15 minutes from frozen or 12 minutes after thawing. | | | | | | | Electric or Gas Steam Room | | Plate Regeneration
| Used in primarily for catering activities, this method can be implemented with our meat and fish for assembling, once thawed and removed from pouch. The juiciness of our products due to the "Sous-vide" cooking technology allows our products to hold their extraordinary texture and natural juices even after an extended reheating period. | | This recent method is not yet widely available. It applies to our fish and meat for assembling in single and multi portions. The products should always be completely thawed and removed from pouch before being dressed cold on the plate along with the side of your choice. Reheating times depend on the thickness of products and the sides used.
| | | | | | | Steam Oven
| | | Microwave | | Reheat products frozen or refrigerator thawed in their original sealed pouch. Timing is the same as the bain-marie method. | | Only with single portion products. Use this method to rehaet our products quickly if no other equipment is available (office kitchenette, self-service, etc.) In order to maintain the quality of our products, please use a reduced microwave power : 750 watts. Puncture the pouch with 2 holes and reheat directly from frozen for about 4 minutes or 2 minutes after thawing | | | | | Mini' Deliss
| | VIP Glasses | Serve Chilled. Do not reheat these products. You can defrost all or part of the 6 unit tray by placing them in the refrigerator, between 0°C and +4°C for approximatly 6 hours.
